The Secrets of MoleRosalba Ramos and her daughter hollow out chiles prior to roasting them for the mole paste. Photo by Shannon Young.
Description
Mole is the champion of Mexican sauces. It's a complex mix of chile peppers, chocolate, herbs and spices, often served with chicken, enchiladas, or over a bed of rice. You can buy mole pre-packaged and mass-produced, but in the southern state of Oaxaca, countless families guard their own special recipes that have been honed to perfection over the generations.
Reporter Shannon Young visited one cook whose recipe is so secret, she wouldn't reveal some of her ingredients. Here's the latest installment of our "What's Cooking" series.
